Roasting consists of cooking the green coffee bean (raw material) to release its aromas by a phenomenon called “Maillard reaction”. Thus, during heating, the sugars and amino acids present in the grain and developed during maturation turn into aromatic molecules.
Separate roasting
Each of our exclusive recipes is the fruit of the creation of an assembly of coffee beans from terroirs, varieties or different processes. The most commonly used roasting process is to cook the grains into amalgam, that is, to mix the green beans before cooking. However, each crop, because of its peculiarities, has grains of a specific nature in terms of size, density and hygrometry. Thus, we preferred to the so-called “conventional” roasting process a so-called “separate” roasting process. The latter consists in cooking each quality of green coffee separately, in order to obtain the ideal roasting profile ensuring the best aromatic development.
Slow roasting
From an industrial point of view, it is much more interesting to make a rapid roasting under higher temperatures and pressures because, in addition to saving time, the loss in weight during cooking is much less important. When roasting, our goal is not to save time or money, but to sublimate the sensory profile of each of our coffee crus. Thus, we opted for a traditional cooking, slow on low heat, allowing the coffee to develop better. Like a good cooking for the gastronomy, this method of artisanal roasting is directly responsible for the quality and the aromatic complexity that you will find in each cup of our exceptional recipes!

Our main objective is to draw the quintessence of our capsule by mastering the sourcing of green coffees, assembly techniques and the creation of sensory profiles for roasting, in order to offer an offer in total adequacy with your expectations.
In each producing country, at the heart of each production region, we select the best qualities to ensure that our recipes have a typical sensory profile, of irreproachable and regular quality, without risk of alteration by defects. All origins assembled in our exclusive creations are guaranteed new harvest!
Our exclusive recipes have been painstakingly created in the workshop, by coffee experts perfectly mastering the technical constraints of our Nespresso® * compatible capsule, with the aim of magnifying its extraction potential.
Each of the qualities that go into the composition of our creations benefits from a separate roasting, slow and artisanal. This traditional method, associated with an assembly principle after roasting, allows us to sublimate the finesse and aromatic richness of each recipe.
